Malting can be simply thought of the process of making
the sugar 糖 in grains 谷物
ready for brewing (of beer) 酿造啤酒.
Basically the malting process involves three stages

cleaning and immersing / soaking the grains 谷物
in water; this step "awakens" the grains 谷物 * germinating 发芽 -
allowing the grains 谷物
to sprout 发芽 * drying -
a kilning 窑炉 process is usually used to dry the
germinated grains The grains 谷物
most favoured by brewers is barley 大麦.
The sugars 糖
produced during the malting process are then brewed
and fermented
发酵
into alcohol.
