The food sample to be tested in placed inside the Visking tube. After a period of time, the distilled water is tested for the types of food present.

Among the common food tests carried out are the Iodine test for the presence of starch, and the Benedict's solution test for the presence of sugar (glucose).

Iodine tests would normally yield negative results (the solution will NOT turn blue black) as starch molecules (particles) are too large to diffuse through the Visking tube into the distilled water.

The Benedict's solution tests would be positive (brick red precipitate is formed) if there is a presence of sugar particles (glucose molecules). This can happen if the food sample inside the Visking tube contains glucose, or starch with the enzyme amylase / saliva. The enzyme amylase (also present in saliva) will digest starch into smaller glucose molecules that can diffuse through the Visking tube into the distilled water.
