Crossing Over the Bridge Noodles
(A Legend)
过桥米线 guò qiáo mǐ
xiàn
Legend has it that a scholar 学
者 xué zhě in
Kunming 昆明 kūn míng,
who was preparing for the Chinese Imperial Examinations 中
国科举考试 zhōng guó kē jǔ kǎo shì had a loving and
devoted wife 妻子 qī zi.
To concentrate on his studies, he decided to isolate himself on a
little island 岛 dǎo.
Every day, his devoted wife 妻子
qī zi would cross the bridge 过桥 guò
qiáo that connected the island 岛 dǎo
to the mainland to deliver him his lunch 午
餐 wǔ cān. However, due to the distance, the
noodles became soggy when she reached his place of study. Wanting
only the best for her husband, she devised a method to prevent the
noodles from becoming spongy or soggy. She placed hot soup 热汤 rè tāng in an
earthen bowl 碗 wǎn
and poured a thin layer of oil 油 yóu
over it to insulate the heat 热
能 rè néng.
She separated the noodles, meat 肉 ròu and garnishing 配菜 pèi
cài and placed them in different containers.
Upon arrival at the place of study, she would mix the ingredients
配料 pèi
liào and noodles together in the burning hot
soup - in a fixed order. She would first put in the raw meat 生肉 shēng
ròu (as meat would take longer to cook),
followed by vegetables 蔬菜 shū
cài and garnishing 配
菜 pèi cài.
Finally, she would put the noodles in.
Since then, the dish has been called "Crossing Over the Bridge
Noodles" 过桥米线 guò
qiáo mǐ xiàn.
