The food that many would pick to represent Vietnam has to be the rice noodle soup called "pho". It is pronounced "fuh" because the name is derived from the French term "pot-au-feu" (stewed beef). Even though the meat in the soup is traditionally beef, a number of pho eateries today serve the dish with other types of meat and other parts (innards) of the cow. The bowl of beef, broth and noodle is served with a garnishing of mung bean sprouts, slices of lime, cilantro and basil leaves. Hoisin (fish sauce) frequently accompanies the dish.
