has to be the rice noodle soup
called "pho" 越南河粉. It is pronounced "fuh"
because the name 名 is derived from the
French 法语 term "pot-au-feu" (stewed
beef 炖牛肉). Even though the meat 肉
in the soup 汤 is traditionally beef 牛
肉,
a number of pho eateries today serve
the dish with other types of meat 肉
and other parts (innards) of the cow /
beef offal 牛内脏. The bowl of beef 牛内,
broth 汤 and noodle 河粉 is served with a
garnishing 装饰 of mung bean sprouts
绿豆芽, slices of lime
酸橙片, cilantro 胡荽叶 / 香菜 and basil
leaves 罗勒叶. Hoisin (fish sauce)
鱼露 frequently accompanies the dish.
